Breakfast was leftover asparagus and Italian chicken sausage from yesterday diced up and scrambled with a couple of eggs - took me about five minutes to prep and cook. Lunch was one of my favorites, and so fast and easy in about five minutes i had: shredded cabbage, diced turkey deli meat, half an apple diced, a little mayo, olive oil, and balsamic vinegar, sliced almonds and black pepper, all mixed up and ready to go. Rowan had steamed carrots, turkey and some green beans. Dinner was pork tenderloin in the crockpot with cacciatore sauce from TJ’s - threw in some frozen bell peppers and onions, poured some bacon grease over all that (gotta have that fat!!), poured in the sauce, sliced up an acorn squash to cook on top of it all. Prep time for this was about 10 minutes and it was SO GOOD!!
